Findus for Pancakes is a glimpse into the wonderful world of Sven Nordqvist. Next week it will be Mardi Gras or Shrove Tuesday, and time to use up all the eggs and sugar before Lent, so although Pettson is helping to make a pancake cake for Findus’ birthday, we have the tradition of making them on this particular day at this time of year (though my children would have me believe every day is pancake day).
The recipe below makes a lot of pancakes, so you can scale it down (2 eggs to 200ml milk), or you can trust that the whole pile will disappear…
Pancake Recipe
5 eggs
600 ml/21 fl oz/2.5 cups milk
2 tbsp sugar
1 tsp salt
500 ml/18 fl oz/2 cups flour
100 ml/4 fl oz/0.5 cups water
2 tbsp butter
200 ml/7 fl oz/0.8 cups double cream
Jam

- Mix the 5 eggs, half the milk, sugar and salt.
- Add the flour and mix until smooth with no lumps. Add the remaining milk and water. Leave to sit for a moment.
- In a frying pan melt the butter and add this to the mix so you don’t have to use so much butter between pourings. Cook the pancakes and let them cool.
- Whip the cream. Spread the cream and jam alternately on the pancakes. Decorate.
