As we begin 2025 many of us feel we over-indulged at Christmas and need to cut down, but this banana cake recipe can be a healthy comfort food. It’s a true luxury and because it has no sugar or eggs a small slice won’t upset anyone’s low-calorie diet – much!
INGREDIENTS:
- 80g (3oz) wholewheat or gluten-free plain flour
- 125g (4 1/2oz) gluten-free self-raising flour
- 4 tsp baking powder
- 1 tsp salt
- 1 tsp grated nutmeg
- 1 small tsp xanthan gum
- 225g (8oz) pitted dates, chopped and whizzed up
- 4 squishy bananas
- 1 slosh of water or milk substitute
- 100g (4oz) coconut oil
Heat the oven to 170ºC/ fan 150ºC/ 325ºF/ Gas 3.
Sift all the dry ingredients together into a mixing bowl. Add all the other ingredients and beat everything together until well combined.
Pour into a greaseproof paper-lined loaf tin. Bake at the centre of the oven for about 1 hour or until golden brown. Remove from the tin and cool on a wire rack.
