About the authors
Eva-Lena Larsson and Kennert Danielsson are based at Gothenburg Botanical Garden, where they work with horticultural therapy and environmental education. With this book they want to share the joy of nature activities, whether it is growing plants, building windmills, baking currant cakes or just being outdoors. Recycling is a keyword in the book and the only limit is your imagination.
Here is an example activity taken from September:
You will need:
- 1.5 litres of water
- 1.5kg of dried rosehips
- 150g of sugar
- 2 tablespoons of potato starch
- 100ml water
If you need to make less or more soup, then reduce or increase the amounts of all the ingredients by the same percentage. Pick a bagful of rosehips. It’s easiest to snip them off with clippers. Wash, then slice each one in half and scrape out the seeds and hairs with a spoon – the seeds and hair can be discarded. Spread out the hips to dry or use them immediately.
Grind up the rosehips using a mortar and pestle. Bring the 1.5 litres of water to the boil, add the hips and boil for five minutes. Strain the soup to remove the skins and pulp, then return it to the pot. Add the sugar to taste. Stir the potato starch into the 100ml of water, add the mixture to the soup and bring back to boil. Enjoy!
